Fruit Spritzer! :)



Ingredients:
1 lime, juice
1 orange, juice
3 chunks frozen cantaloupe (about 1” cubes)
3 chunks frozen pineapple (about 1” cubes)
4 slices of frozen strawberries
1/4c sierra mist/7 up

Directions:
1.      Put everything in a blender.
2.      Blend until all incorporated and mixed.
3.      Add rest of sierra mist/7 up.

This will make 2 servings, dividing the pop and fruit mix between two glasses. Very refreshing! :)







Beef Enchilada Casserole/Lasagna


Ingredients:
1/4c Salsa
1/2c Sour Cream
1 ½ # ground beef
Tortillas
Salt
Pepper
1 clove of garlic, minced
1 jalapeƱo, deveined/seeded, minced
1 small onion, minced
1 taco seasoning packet
2c shredded cheese

Directions:
1.      Cook ground beef with onion, garlic, jalapeƱo.
2.      Drain grease. Add taco packet and water (however much according to packet directions).
3.      Mix sour cream and salsa to the hamburger.
4.      Grease casserole dish.
5.      Preheat oven to 350F
6.      Cook for 15 min or until cheese is melted and golden brown.
Layers:
1.      Meat
2.      Tortilla
3.      Beef mix
4.      Cheese
5.      REPEAT.
6.      Top with cheese.
Serve with salsa, sour cream, lettuce, tomato, whatever you have with your tacos. This is actually more like lasagna than enchiladas but it’s what my mom calls it (all the while horribly pronouncing “enchiladas” wrong. She says “an-chill-ah-dahs.” She’s close to getting it right but it’s “ehn-chee-lah-dahs”. Lol. I get annoyed when people mispronounce words. Such as… jalapeƱos (ha-lah-pain-yos) chiles (chee-lays) uhh yeah. There are many more that I may rant on at a later time and not to get me confused with some uppity cook, I just like to stay close to the food I make and that means pronouncing it right.
  My mom likes to add black beans with the hamburger mix but I didn’t do that today because 1. I accidentally forgot the black beans and 2. *whispers* I’m not exactly a fan of the beans in it. I typically like to add whole kernal corn for some color but I forgot those too.  :) Hope you like it, very simple and just something a little different than tacos!












I eat weird things for breakfast.

I tend to eat leftovers for breakfast. No matter what they are. They are much better than stupid cereal (which DOES NOT fill me at all, and never will). This morning, I had leftover chicken noodle soup, pistachio salad (also apparently called "watergate salad") and white grape juice. This morning's meal was absolutely lovely. :D
As I have said before, I am leftover queen. If my family didn't have me, they'd be throwing out food left and right. Lol! :)
So, sometimes when the only thing for breakfast is leftovers. Eat it. Or even create a new dish with it as I tend to do. :)

Menu Plans for Next Week!

Taking it a little easy this week. Not sure what days I'll do what but I may have a friend coming over so I'll try to plan accordingly. :)

Chicken Noodle Soup!

Ingredients:
1 onion
4 carrots (big sized)
4 stalks of celery
1 can whole kernel corn
6 chicken breasts, chunked up.
1 bag and a ½ of shell noodles
Chicken Broth
2t garlic powder
Salt & pepper
¾ of tub of sour cream
2T butter

Directions:
1.      Preheat oven to 375F.
2.      Put chicken on a baking sheet, season with salt, pepper, and lawry’s.
3.      Cook for 20-30min (if baking from frozen, if not, reduce time) If you don’t want to mess with cooking the chicken, feel free to pick up a rotisserie chicken at your local supermarket and just remove the skin and chunk up the chicken. :)
4.      Depending on how you like your veggies, slice, or dice all the veggies, roughly the same size so they all cook at the same time. I finely chopped mine using the food processor.
5.      Heat a soup pot with butter, add veggies (except corn) and cook them lightly until soft.
6.      Add 12 cups of water, if you have a big enough pot, go ahead and add a gallon (16c) to it. (if you’re going to use the bouillon cubes or dry soup base/broth to pot. Check the seasonings! Also add the garlic powder at this time.
7.      Bring broth to a boil.
8.      Add chunked up cooked chicken , corn, and noodles.
9.      Cook until noodles are tender.
10.  Add the sour cream and serve.

I know, those chicken thingies are NOT breasts, all we had were chicken tenders, so I just put 12 of them on there figuring 2 tenders per breast. I made this for a church potluck so I will transfer this to a crock pot and heat up tomorrow. (It really gets better the day after). I serve this soup with shredded cheese and crackers. Hope you like it! :)








Waffles!


Ingredients:
2c ap flour
2T sugar
1T baking powder
1t salt
2 eggs
2c milk
1t nutmeg
1t cinnamon
1t ground ginger
2t orange zest
2T honey
1t vanilla
2T vegetable oil

Directions:
1.      Combine ALL liquid ingredients in a big bowl.
2.      Sift together ALL dry ingredients.
3.      Slowly add the dry into the wet ingredients.
4.      Let sit while waiting for the waffle iron to warm up.
5.      Put 1-2 ladles in the waffle maker (Mine makes 2 waffles at a time).
6.      Cook for 5 min or until light comes on or until the steam stops. Just depends on your waffle maker.
7.      Put on a plate and cover with foil until ready to serve.
This recipe makes: 10-11 waffles, or 5 servings at 2 waffles each.
I decided to make this for my family this morning mostly because 1. there isn’t much for breakfast today and, 2. Jon has a friend over so I may as well be nice. They turned out REALLY well and the orange zest really adds to the waffles. We topped these with jelly/jam. We didn’t have syrup so we just used what we had and it was very good. :)
My mom made the comment that the orange zest is great in the waffles because then it seems like you don’t even need syrup. And you don’t. Try it with some grape jelly or strawberry rhubarb! They are super delicious!
