First Recipe! Pork Caccitore

Hello!

Tonight's menu consisted of Pork Caccitore with noodles.  I was originally going to do this in a slow cooker but decided to cook it in the oven instead. It turned out really well and I will be making it again! Enjoy!

Ingredients:



4 Pork Chops (I used bone in)
1 med onion, thinly sliced. (I used 2 small onions)
2T Olive oil/ Vegetable oil
28oz Pasta Sauce (I used veggie)
1 can diced tomatoes
2 splashes of red wine
1t minced garlic
1/4t ground mustard
1/2t dried basil
1/4t chili pepper
1 1/2t pepper
1c flour
3-4T kosher salt for water
1 box of pasta noodles
1T sugar

Parmesan cheese for topping.

Directions:

1. Heat large, oven safe skillet with olive oil/veggie oil.
2. Coat pork with flour, (1/2t) salt, (1/2t) pepper, and (1/4t) chili powder.
(don't forget to shake off excess flour)
3. Add pork to hot oil, let brown on each side 2-3min.



(don't worry about fully cooking them yet, we just want color)
4. Remove pork to separate plate.
5. Add sliced onions to hot pan (may need to add some extra oil).
6. Add garlic. (BE CAREFUL SO YOU DON'T BURN IT!)


7. Add red wine.
8. Add sauce & tomatoes.
9. Add seasonings (and sugar).
10. Put pork into sauce, cover chops with a little tomato sauce.
11. Put in 350F oven for 25min.
12. Boil water.





13. Add 3-4T of kosher salt to boiling water.
14. Add noodles.
15. Cook noodles according to directions.

When pork is finished, should be temp of at least 165F**.


** Calibrate a meat thermometer:**

1. add ice to a glass.
2. add cold water.
3. when thermometer temp reaches 32F, it is calibrated.
4. Insert thermometer into thickest part of meat (about 2-3") and should hold temp for at least 10 seconds.
5. Temp for pork should be at least 165F.
